Recipe: Sweet Potato Carbonara

I’m always looking for recipes to make for dinner that I’ve never made before. This one from Eating Well Magazine popped up on my Facebook feed, I freaked out a little bit and added it to my meal list immediately. I made it and it was soooooooo delicious and easy (my two favorite qualities in a meal I’m making). My husband has been raving about it ever since. Because of my dietary restrictions and the fact that I’m using bone broth to heal my gut, I adapted the recipe to suit my needs. You can find the original recipe at eatingwell.com.

Recipe: Taraleigh’s Costa Rican Casados

One of my favorite things about Costa Rica is the food. I love exploring different parts of the country and eating at different sodas. Sodas are basically restaurants where they serve typical Costa Rican food and it’s simplest, cheapest and most delicious.

I have eaten more casados (the Costa Rican typical plate) than years I have been alive on this planet in this lifetime. Here is a recipe that shows you how to make your own vegetarian style!

There’s no freakin way this smoothie is healthy…except that it is

You asked for it! Here’s how to make one of my favorite smoothies. It’s a mint chocolate chip one and it’s awesome…especially when you make it while rocking out to a Reba jam by Phish.

This smoothie is not only healthy, but it seriously tastes like mint chocolate chip ice-cream. It’s crazy!!!!


Here’s what’s in it:

Ingredients

1 handful greens (whatever you like…spinach, kale, chard)

1/4 cup pineapple (frozen or fresh)

1/2 avocado

1 capful organic peppermint extract

Milk (I used unsweetened coconut milk)

5 figs or dates

Optional superfoods (I used chia seeds, spiralina and nori seaweed powder)

Directions

Place everything in the blender and blend while rocking out. If using a vitamix start at 1 and move to 10 and then set the gear shift to high and it will go out of control. Then pour it into a glass and enjoy it because it’s soooooo good!
