Dandelions are one of my favorite flowers. I love that they are such a vibrant yellow color and that in the spring you can find them almost anywhere there is grass. They get a bad rap and people do all sorts of things to kill them, but the truth is they are edible, delicious and nutritious. When you make this recipe, make sure you get your dandelions from a spot that wasn’t treated with chemicals.
What’s in the Magic
Dandelion flower tops
1 organic and free-range egg
1 cup organic coconut milk
1 cup organic flour (I use brown rice, buckwheat or coconut flour)
My hubby and I were faced with a very serious dilemma. Do we go out for dinner because we are feeling too lazy to cook or do we make something simple? Before we answered that question we took a moment to express gratitude for the fact that we are able to ask it because we are so abundant and have so many food choices. We are so lucky!
Then I remembered I had bought all the ingredients to make a sweet potato crust quiche so we decided to work together and create this dinner masterpiece. We adapted the recipe from Cooking Light and it was incredibly easy and epically delicious.
I’m always looking for recipes to make for dinner that I’ve never made before. This one from Eating Well Magazine popped up on my Facebook feed, I freaked out a little bit and added it to my meal list immediately. I made it and it was soooooooo delicious and easy (my two favorite qualities in a meal I’m making). My husband has been raving about it ever since. Because of my dietary restrictions and the fact that I’m using bone broth to heal my gut, I adapted the recipe to suit my needs. You can find the original recipe at eatingwell.com.
Sometimes after “work” time I like to take yoga, watch the sunset, hang out with friends, get some tea, go for a walk or go grocery shopping. On those days when I get home I like to make something easy that doesn’t take a lot of time. I also like to pretend that I’m really good at gangsta rap.
You asked for it! Here’s how to make one of my favorite smoothies. It’s a mint chocolate chip one and it’s awesome…especially when you make it while rocking out to a Reba jam by Phish.
This smoothie is not only healthy, but it seriously tastes like mint chocolate chip ice-cream. It’s crazy!!!!
Here’s what’s in it:
1 handful greens (whatever you like…spinach, kale, chard)
1/4 cup pineapple (frozen or fresh)
1 capful organic peppermint extract
Milk (I used unsweetened coconut milk)
5 figs or dates
Optional superfoods (I used chia seeds, spiralina and nori seaweed powder)
Place everything in the blender and blend while rocking out. If using a vitamix start at 1 and move to 10 and then set the gear shift to high and it will go out of control. Then pour it into a glass and enjoy it because it’s soooooo good!
