Recipe: Taraleigh’s Costa Rican Casados

One of my favorite things about Costa Rica is the food. I love exploring different parts of the country and eating at different sodas. Sodas are basically restaurants where they serve typical Costa Rican food and it’s simplest, cheapest and most delicious.

I have eaten more casados (the Costa Rican typical plate) than years I have been alive on this planet in this lifetime. Here is a recipe that shows you how to make your own vegetarian style!


Taraleigh’s Casado


1 cup uncooked white or brown rice

2 onion diced

Garlic diced

1 green pepper diced

Coconut oil

1 can of organic black beans rinsed and drained

1 carrot shredded

White wine vinegar

1 plantain

Fresh veggies of your choice (Broccoli, carrots, potatoes)

Organic cage free eggs fried (1 for each person)



Simmer 1/2 an onion, peppers and garlic in a little oil until the onions are translucent.  Add one cup rice, mix until it’s been covered with oil.  Add one cup water and cook as normal.


Simmer 1/2 onion and some garlic until onions are translucent.  Add a can of black beans and simmer.

Side Salad: 

Toss the shredded carrot in some white wine vinegar.


Take a plantain.  Slice it into pieces about half an inch thick. Fry each in oil for about 3-4 minutes per side. Remove from oil, flatten with either a spatula or all at once by pressing down with a plate.  Dip each in cold water before returning it to the oil for about one minute per side, until crispy.


I simmered veggies in a saucepan with veggie broth and more onions and peppers.  Seasoned with salt and pepper.

Avocado and Eggs:
Fry the eggs up to your liking and slice the amount of avocados you want to eat
Have dance breaks while wearing hot weather clothes like bikinis, speedos, shorts and flip flops while things are cooking.
When everything is done, put it all on a plate, put the plate on the table, take three deep breaths, express what you are grateful for and enjoy your meal.
